For this ravioli we use Gorgonzola dolce, traditionally made from cows milk, it has a wonderful flavour that is relatively mild in comparison to other blue veined cheeses, it has a creamy texture with the perfect balance of salty and sweet. To temper the gorgonzola and add a bit more creaminess, we mix in ricotta cheese and of coarse some chopped fresh walnuts. SAUCE SUGGESTION: Pairs
